Since the title states GM production records and John Hinckley has taught us there was a 'pay point' in the assy process (car driven off the line to transport holding area), I'm pretty sure the car wasn't 'produced' until it passed the 'pay point'...
Is there any hope that this sort of information may become available for earlier vehicles, or is it probable that delivery info on 53- 61 cars has been lost or destroyed?
If indeed the production date is at "paypoint" it should open up some
interesting scenario's. Here is an example: Take a C2 St.Louis body car
that has a legitimate Trim Tag. It has a date say March 20 and a production date of March 26 as an example. We then can assume something happened to it out of the ordinary. eg: Body had extra work done; engine R/R; or who knows. Am I correct in this thinking or am I
missing something? Would like John Hinckley to comment.

Partly depends on AO Smith vs St Louis body build as to wait time between body build and Pay Point. St Louis bodies went online immediately and AOS went on as needed.
It isn't clear to me whether the information covers all cars. I would be willing to spring for the $40, but I do not want to pay $40 to be told my VIN is not in the records.
Is this the "rumored long lost documentation" banged around on Corvette Forum a while back?
