What is the best paint process, brand and correct color code for the 57'?

There are many subtle variations in the colors of "Chevy Engine Orange" aerosol paints on the market, just as there were in the original engine paint, which was purchased in bulk based on whose prices were lowest that month. I prefer VHT and Seymour, there are many others out there as well; don't think it matters much - it's not as though anyone has 46-year-old "color chips" from Flint Engine to compare against. My two cents.

If I'm not mistaken, I think the engine color for both a '56 and '57 is red not orange.

'56 had their own 0ne year only red color, sort of a cool deep red . The '57 blocks were painted Chevy Orange which continued for many years. Regards,
