Your 1968 bellhousing (if the car is a small block) will be a GM #3858403. This bellhousing is designed for use with a 12-3/4" flywheel and 10.4" clutch, which is what you should have. This bellhousing and flywheel will bolt right up to any pre-86 350 cid block.
The 350 that you are contemplating, if it came from a manual trans application, will VERY likely be equipped with a 3899621 or 469697 bellhousing. Either of these are designed for 14" flywheels and 11" clutches and either of these bellhousings and flywheels will also work on your car. After 1968, the only small blocks that were equipped with 12-3/4" flywheels were the 70-72 ZR-1 and I don't expect that your engine is comimg out of one of them. If you wish to switch to the 14" flywheel/11" clutch, all you will have to change is your starter nose housing.
If the 350 engine which you are contemplating came from an automatic application, it won't have a bellhousing or manual trans flywheel. It also won't have a pilot bushing installed in the crankshaft. Don't forgot to install that or, after starting the engine, you'll quickly find the need to "go back in" to correct it. "Going back in" is never fun and is ALWAYS to be avoided when working on cars.
