Hello, I am a new 1960 owner and I am working on getting the motor to idle good (yikes!). I noticed in the parts box that the previous owner gave me that there is a venturi plate (about 3/4 thick) and gaskets that seem to go under the carb. The plate is stamped "57". Does anyone know if it is suppose to be on the car. The car has a single 4 carb.

It depends what sort of "plate" that you're talking about. If it's plate, alone, which would act as a spacer, then no such plate or spacer was ever used on your car. In this case, it's likely an aftermarket piece.
If you are talking about a "plate" which has throttle shafts and butterfly valves, then it may be a spare throttle body assembly for a carburetor, yours or otherwise.
