I am in the process of putting my '67 BB engine together. It has the original AC fuel pump. Should I check it before installation, and if so, what is the simplest way to do so?

If you're talking about a well-used original fuel pump, I wouldn't bother re-installing it unless you plan for the car to be a "trailer queen". If you're going to drive the car, obtain a NEW fuel pump, either NOS if you must have the logo/stampings or a new Delco unit of GM #6416741.
I don't know of any practical way to test these pumps off an engine and there's certainly no way to test how much life one has left in it even if there were a practical way to test whether or not it happens to work now. Fuel pumps are an important SAFETY item. They're also important to keep you from getting stranded 100 miles from nowhere.In Appreciation of John Hinckley- Top

Agree with joe's post but if you MUST use the old original and wan a helf-assed way to test it, clamp the pump ina vise(i sandwich the mounting flange of the pump between the jaws of the vide), then depress the actuator arm. listen to the inlet and outlet fittings or better yet have a friend place thumb ofver the inlet and outlets. inlet ought to pull vac.(skin of thumb is pulled) and the outlet will push skin on thumb if the puppy MIGHT be working 100%. if no actions on thumb , toss it in garbage can> mike- Top
