When starting my 61 315hp fuelie from cold it initially goes to high idle somewhere between 1500 and 1700 rpm's depending on the outside temp. After about two minutes the idle increases to 2000-2100 rpm's instead of decreasing as the engine warms up. It will stay there until I kick it off high idle. If it has not warmed up sufficiently at this point it will often stall. These old fuelies are new uncharted territory for me so some imput from the experts would be greatly appreciated.

I'll go ahead and say my piece before the experts respond.
Your 7320(?) series FI unit has a two stage, stepped choke. This was a weak design from the start. At full choke it does two things: boost the vacuum signal going to the main diaphragm (with some intake vacuum), and cut off vacuum to the enrichment diaphragm. Cutting off vacuum to the enrichment diaphragm causes the enrichment lever to stay on the power (rich) stop. As the electric choke comes off, it suddenly releases intake vacuum to the enrichment diaphragm. This causes the lever to pop over to the economy (lean) stop. Your engine reacts by immediately speeding up. It has been getting a super rich mixture (that it doesn't need) until that point.
There's another design deficiency with the idle circuit of a 7320, but it's too complicated for my fat typing fingers to explain. That's probably why your engine sometimes dies at idle, especially when cold. You can call me if you want more info on this fix. My phone number is in my profile.
