In the late '70s, a friend ran Corvette 8 inch Rally wheels with Hoosier G60-15 tires for autocrossing his '66 427 coupe. Being he bought the coupe new and ran in the Stock class, he didn't flare the fenders like so common back then and kept them stock. I don't know if the inner lip was trimmed or not.
A G60-15 is roughly a 245/60-15 today.
I wouldn't suggest that you can run a 245/60 but I would say you can run more than most think, provided you trial fit the tires and see what you can get underneath. I'd also suggest you seek a few forums where the need to stay stock isn't so supreme and you might find lots of answers.

are two places you might find that people have put a lot of non-stock sizes under their stock fenders.
Corvette Forum happens to have a discussion on tires right now and there are some at 215/65-15 and 215/70-15 on tires, apparently on 6 inch rims.
If you aren't planning on a stock look with the hubcaps, then you can explore the 16 inch wheel combos. I saw a black midyear convertible at Disney a few years back that had a fairly wide 50 series I believe on 16 inch rims.
My recommendation would be this - do not mix stock and performance driving. Choose one, the other, or both separately, but not both together. If you want both, set up your stock wheels and tires, bag them, put them in the basement, and mount up wider aftermarket wheels and wide tires to drive on. When you get ready for judging, pull the stock ones out and put them on.
If you get it to handle too well on stock-like wheels, you just might pop a hubcap going down the road and lose it.
