Is there any source that cross references the various fasteners (screws, bolts and nuts) references in the AM by GM part number with the actual size of the fastener? In other words, if the AM says that "4059020 Screw ASM" is used to fasten part "A" to part "B", how can I find out what size screw part number 4059020 is?

There's no easy way to do it. Some of the PRODUCTION fastners were also available in SERVICE. If they were and you happen to have a Standard Parts Catalog which still included the fastner, you might be able to get some of the information on it. Thread pitch, size, and material are 3 of the main things you will get from the Standard Parts Catalog. Some editions include finish, but NONE include manufacturer's headmarking or head type.
Since only about 10% of the fastners used in PRODUCTION for Corvettes were ever available in SERVICE (and, consequently, included in the Standard Parts Catalog) the odds are not good that you'll find the information even if you had the catalogs.
Empirical information (i.e. information obtained by observation and/or measurement of known fastners from the various positions on the cars) is about the best thing you'll find.
