...Engine application would be SBC Crate 383 Hi-torque. Question would be, is there a GM manifold currently available in a, let's say, 2&1/2" "performance design" with a rear dump application??? I've never looked much beyond the 2.5" Corvette ram's horns, since they're about as good a manifold and you can get. I'm not that familiar with the various SB rear outlet versions, but off the top of my head, I'm not aware of any that have more than a 2" outlet.
Since this car already seems to have been... ahhhh, modified, maybe there is something in the aftermarket that might be worth considering. Sanderson? A shorty header with a rear outlet?

I'd say that it's very likely that the application involved here is what's causing your manifold fitment problems. That will do it every time.
Now, to the "meat" of the matter: as far as 2-1/2" REAR outlet manifolds, if you start looking for them you'll be at it a LONG while. NONE were ever made by GM or used on ANY Chevrolet small block. The only manifolds which GM EVER made for a small block Chevrolet that were 2-1/2" outlet were the center outlet manifolds used on 62-65 Corvettes and a few other Chevrolet passenger car applications (about 1963-64 for 300 hp 327 and 4 speed). All other small block manifolds were 2" outlet size.
Now, as far as 2" REAR outlet manifolds, there were some manufactured. There were the "semi-rear outlet" manifolds used for 55-56 small block applications. I don't think that these will do you any good and they're LONG discontinued anyway. Used ones are usually "used up".
The manifolds that you may be able to use is the style used mostly for Chevelle, Camaro, and Chevy II small blocks in the mid-60s to the mid 70's. There are several different casting numbers. These manifolds are not of the "ram's horn" style, though. They are of the "W" configuration.
The good news is that you can still get these manifolds from GM. The right side is GM PART #336710 and it currentlly GM lists for $239.58. The left side is GM PART #346222 and it currently GM lists for $300.91. These manifolds will have AIR fittings which can be plugged.

Chevelle and Camaro exhaust manifolds are common and cheap at swapmeets. As Joe said, they are all 2" and will not be condusive to high RPM performance with the 383.
How about "shortie" headers for a Chevelle. These approximate the stock manifolds in outlet position and will perform much better at higher RPM.

Here are two photos of Patriot H8019-1 headers that I am using on my zz383 stroker in my 66 Vette Coupe. Maybe they would work for you.

dipstuck: go to jeg's latest catalog, page 10 and 11. looks like the small block headers designed to fit a sbc powered S-10 pickup may work for your Nomad. PS--dipstuck not mispelled.mikie- Top

dip: i've got a pair of sbc hookers headers that were made in the early 70's. they're two piece, side of block huggin variety. how nmuch room ya got between the head and the steering component in question? you can have them if ya want them. they're essentially rust free. mike- Top

I just fit a big block and 4 speed with '92 Buick rack and pinion steering in my '57 Nomad with full length headers. Let me know if you want pictures. And everything is GM or custom made, no F**d parts.

In the Dec 2004 Chevy Rumble magazine they ran a story on the 2004 Z06 exhaust manifolds. They gave them high praise and said they flow slightly better than 2.5in Ramshorns. They are somewhat of a rear discharge and may be 2.5in outlet. GMPartsDirect has this GM PART # 12561256
