No so much what to inspect, but by way of suggesting what to ensure is done at the shop. It's essential (believe me, I learned this the hard way) to make sure that the weatherstrip is installed (some, temporarily) FIRST, on the bare top frame, which is then adjusted to fit against side glass, top bow, rear pins, etc. Once the new top material is installed (and stretched across the frame) there will be little to no adjustment of fit/weather seal available.
Bear in mind, that as has been mentioned numerous times in asides on this board by mid-year owners, I don't think any of the mid-year convertibles were ever truly water-tight. They all reportedly leak to one degree or another. It's a factor of the design. About the best you can hope for is to minimize the leaking in the obvious places.

Drive through a brushless car wash. As long as the water leaks are minimum, and only to the back area, count yourself good. Some leaks at the bottom back of the windows and occasionally under the rear bow in places are never going to get fixed.
If you leak at the front, then that is something to fix as it is nasty driving with a wet towel in your lap to soak up the water.- Top

I've never seen/heard of any shims being installed with weatherstrip, but I guess anything's possible. My comment re: adjusting fit before having the top material installed was owing to the fact that some (many) available adjustments cannot be made once the material is in place and restricts movement of the bows etc.
While the suggestion of a drive through a touchless car wash is more than I would like to experience, the importance of good weather seal on the front end is absolutely valid. Check the AIM and I think you'll find that, along with the screws and push-in fasteners, the front bow weatherstrip also had a bead of some kind of sealer underneath to provide proper water-tightness.
