I know 67 water pumps were painted while on the motor. How much, if any, of the access plate on the back of the pump painted orange?

The EDGES of the plate on the TOP were usually pretty well painted. The EDGES on the BOTTOM side were usually not very well painted. The REAR of the plate received very little paint and the timing cover adjoining it received very little paint. On a small block with short leg pump (as were ALL Corvette small block pumps), the rear plate of the pump and the timing cover are virtually in contact. So, the only paint that gets on these areas is that which is able to drip down at the interface.
