I'm am thinking of buy and restoring a corvette, maybe mid 70's convertable. I am 6' 6" tall and would like to get little extra legroom. Is it possible to move the seats back or are there other options?

Re: Extra legroom
Randy,
I have a friend who drives a 1970 convertible and is 6'3". He had problems until he installed a tilt & telescopic column in his car. He now loves it and has no complaints.
You are limited by the fact that 1) the seats are already mounted to the floor, under the carpet (if done as the factory did it), and 2) if you move the seat back all the way and lean back hard, the seatback can contact the decklid, possibly causing a nice gouge in the paint. '72 and after had, I believe, a little stop on the decklid to keep you from gouging it.
The only way to know for sure is to try one.

Re: Extra legroom
Patrick is correct. A tele wheel helps a lot. I'm just a bit over 6'4" and still comfortably drive a midyear, which have even less space than the sharks. I never had any trouble in the C3s. Clutching will cause you the biggest problem, so if you don't mind the blasphemy (my 2 cents) of an auto trans in a Corvette, that's another avenue to explore.
