The 1967 Chassis Service Manual is the key reference for your project, in addition to the assembly manual; the Service Manual has detailed step-by-step instructions for both teardown and re-assembly. It's a "must-have", and is available from the on-line store on this site.
Bair's is an excellent source for most of the parts, especially the trailing arm assemblies.
Non-grease fitting U-joints are preferable for judging, although the deduction is only one point for those with grease fittings; relative strength isn't an issue unless you're doing hole-shots with a big-block.
Note the shim count at the trailing arm bushings when you take it apart, and put them back the same way to get you to the alignment shop.
