      As a guideline, oil temp on my '89 generally runs a few degrees above the water temp.

          Any idea why I get a readout at all since the wire is unplugged from the sensor?

              It may have a short in the system. Wire might have been unplugged to troubleshoot and not replaced. I would go thru the Shop manual sequence of troubleshooting to see if you can find the problem. I have (fortunately) no "hands on" experience to offer.
