I'd recommend applying the weatherstrips AFTER hanging and fitting the doors; otherwise you'll be fighting the weatherstrip compression while you're trying to fit the doors, and that's hopeless.
Dave, My personal opinion is to adjust the door, and mark the hinges with tape and remove the door to apply the W/S. Have done it both ways, and I can't tell you how much easier it is to put weatherstrip on while it is laying flat on a table. You will have to do some door adjustment after re-hanging the door, but you stand almost no chance of dragging fresh glue all over your new paint.
I will NEVER again put weatherstrip on any removable part while on the car.
The one absolute of lacquer paint is that weatherstrip adhesive will instantly damage the paint if it comes in contact with it! I have hve had to repaint too many panels over the years.....
