Does anyone Know how I can find out how many red on red Vettes were produced with the 427/425hp engine.

I don't think there is "A" specific location where you can find the information that you seek. GM did NOT keep, or for that matter even track, vehicle colors with a specific engine option, or for any options.
There may be someone out there that is compiling such data but it's accuracy would be in question.

The NCRS Specification Guides list the qualtities produced for most options, but as Art said there is no reliable way to determine production quantities of cars with multiple specific options as is the case for your query.

Some individuals maintain registries with option data on individual cars, and they may have enough data to estimate the production quantites of option combinations based on statistical sampling techniques, but that is likely as good as it will ever get.
