What is the acceptable gap betweeen engine build and date on the exhaust manifolds. I have a 12/07/65 engine build date on my 425hp car.

Unless big block cars are judged differently than small block cars, exhaust manifold dates are not judged. If they aren't judged, the JG will not list an acceptable date window. If you want to replace manifolds with correctly dated itmes, almost everything that is judged for dates gives a 6-month window, except for glass, which is 1 year.
On small block engines, it's virtually impossible to read the dates on the exhaust manifolds since the date codes are on the engine side and there is scant room to get a mirror in there.
