Mike,
It seems to me you are talking about Holley date coding. I think the AFB in 1963 had three revisions stamped A B or C so this carburetor would be revision C, dated E = (May), 3 = 1963).
These revisions had to do with jets and metering rods and I believe some adjustments and they started around December of 1962.- Top

Flashing is the extra metal that seeps into a crack, imperfection or joint in a mold when casting a piece. If there was no flashing then the face that was stamped would be smooth, exactly like a re-stamp. Do you know about the line through the "O" in the aluminum valve covers on later manufactured valve covers, that's flashing. In one of the carbs I posted has a small rectangular box on the lower right of the pad along the bottom. It is difficult to distinguish in a 2 D picture. Evidently, the 1963 Carter is not as dear as the 1962, therefore less counterfeits. Some of the 1962 carbs, this rectangular box at 5 o'clock is stamp in or scratched in after grinding the pad flush to remove the numbers and the flashing, giving the illusion of extra metal protruding out (flashing), but in actuality it is recessed in, stamped with a chisel. It is an attempt to lure the unknowing into buying a re-stamped carb and they sell for over a $1,000 on eBay.Thanks Robert for your replies,
I'm having a hard time seeing and understanding what "Flashing" is, also where 5 o'clock and 9 o'clock are. I think I understand they're positions on the carburetor as they relate to those positions on the face of a clock. Is this correct? I looked at the carburetors in the links on eBay you provided. The carburetor that I'm thinking about purchasing is being sold by the seller in the first two links.

Your explanation is great and yes this did help. I think I know what flashing is now.
I am now looking at a 3461S with a date stamp of CF3 (June). My car has a June 21, 1963 build date, so this works out well...I hope.
The revision "C" and the June 21st build date scares me or do they work out okay?
I going to try to attach two photos of this carburetor.
I tried to make them larger but I don't know how.
If I can send them to your email so you can see them better let me know and I will.

In your first picture there is the small rectangular box. It appears to be protruding out which is correct, restamps carbs sometimes use a chisel to create the lines, but the box is recessed in.
I think a June carb on a June 21 car is a little tight for me. I would be looking for a April or May carb.- Top

Welcome aboard. I too have a 300 horse in my 63. When I purchased the car it had a 3721SB. I then went on a Holy grail quest to secure a date appropriate 3461S. As my insanity grew, I ended up buying 3 of them over time just because I feared their scarcity. One is now on my 63, and the others are sitting unrestored in boxes on the shelf. I wasn't aware that folks are now restamping these.
This is not a sale pitch, but if you looking for an unrestored, guaranteed original stamp 3461S model, let me know and I'll check the date codes for you.
