Jace, the knobs are peened over on the under side, generally you drill or dremel tool and grid away carefully. you will need to remove console.

I did a small modification to a new ash tray door knob (purchased from Paragon) for my '64 which allows me to remove the chrome knob without destroying the two nipples. Actually, I replaced the nipples with threaded screws - now, if I remove the console I can remove 2 small screws and reuse the same handle. I wrote a short (not all that technical) tech article for the MAC Signal Seeker a while ago - copy attached, along with 2 pictures.
