My 70 is being repainted and I'm not sure of how to deal with the door hinges. How were they originally done, how much paint coverage etc. The car is being shot in lacquer and will be presented for judging. Tx in advance for any advice.

Doors were installed before the body was painted. The hinges will have the same paint coverage as the rest of the doorjamb.
FWIW: I have observed that some hinges have a bead of caulk (I am sure it is something besides caulk, but that is what it looks like) around them, and others don't. Some strange stuff going on there. Body color is on top of the caulk.
Be sure you have the gaps adjusted to your liking because hinge adjustment after paint will be obvious.Terry- Top

This info is based on my experience with my 71 that still had original paint on it when I restored it. I suspect it applies to your 70 also.
I believe the bodies were painted with the doors hung. The doors were opened and the jams shot with paint. The result was that the hinges had some paint on them, the amount and location depending on just how the painter held the gun. The shims if any, had paint on them in my car.
Here are 2 pictures of the hinges with the door slid off them. You can see the part of the hinge that was inside the door is still black. You can also see that the upper part of the hinges have more paint than the lower surfaces and bottoms.
The third picture is my 71's driver's side jam being painted with acrylic lacquer.
