I have a '62 300hp with a Carter AFB carburetor. The choke was sticking open upon cold start. I have cleaned (and polished) the piston in the choke assembly several times. The last time I applied a small amount of white Lithium grease. The whole mechanism is free and works properly except for one situation. After the car has been brought up to temperature and then cooled down again, the choke sticks open when depressing the accelerator. A slight nudge on the choke lever above the bimetallic strip frees it up and then it engages properly. Any suggestions on how to fix?

Grease or oil on the choke piston is going to eventually cause problems. I suggest using a graphite product like Lok-Eze.
Also, be sure the tiny O-ring between the choke housing and carb body seals properly and that the tube in the exhaust manifold is not corroded through, allowing exhaust gas into the choke clean air system.
