Can anybody please tell me what the codes 21T and E57 mean on my Canadian new 1988 roadster.

I had previously come up empty using Antonick's Black Book.
I suspect those codes are off the build label on the inside surface of the center console lid. There are codes there that deal with production details well beyond the usual optiond covered by Corvette reference books. I would have bet on you having the best shot, Tom.- Top

I'm virtually certain that's the problem here. In any event, I can say, for certain, that these are not RPO codes. These are codes for other aspects of the car's build which may (or may not) be related to certain RPO's on the car.
By the C4 era, the build of Corvettes had gotten VERY complicated. The old "ECL" system was no longer adequate and a greatly expanded system was adopted. This was not unique to Corvettes since the complexity of other GM cars increased as well.In Appreciation of John Hinckley- Top
