If you're talking about "re-skinning" the vinyl covering, I'm not aware of anyone that does that. In fact, I don't even know that there are reproduction parts available for the do-it-yourselfer to do this.
If you're talking about repairing broken "tabs" used to attach the console plate, kits are available for this repair. That you can do yourself.
If you're talking about the parking brake console, I don't know of anyone that repairs them. However, these can often be repaired if not too badly broken and with all pieces present using epoxy and/or fiberglass on the bottom side. I've had EXCELLENT results doing this followed by painting the exterior surface, as-original.In Appreciation of John Hinckley- Top

On my old console I ended up making pieces from some old corvette body panels. They were cut to shape and then bonded to the console with corvette body panel bonding material.
Used some clamps to hold the pieces in while curing. Once cured, pieces were shaped with a dremel and filed to final shape.
Worked very well at the time.
More fun than buying a kit
