Colin, it's called an "Agreed Value" policy, and you need to make sure that it really is a true Agreed Value policy. You set the value of the car (within reason) and they'll set your premium accordingly. There is a lot in the archives about this, you should check it out.

I just got insurance for my '64 L-84. I got estimates from several companies. The best rate by far was from NCM (National Corvette Museum). You can get an estimate on-line from many companies and you can set the value you want, although I asked for a value that was $20K more than what they said was the book value and that was their limit. I agreed and took the policy which states that it is an "agreed value".
