Is it better to paint the body off the chassis or on? A paint guy I'm considering told me that the body has to be on the chassis?

Paint it with the body off, as the factory did. You'll make less of a mess with everything else, and you can get to hard to reach places. There are several threads on this:

Body work, setting gaps etc, should be done with the body on the frame. As far as painting goes, I've done it both ways and prefer the body off the frame. That way, the frame and everything else stays perfectly clean with no sanding residue or overspray.- Top

I agree with the body off for paint. Nothing like a bunch of overspray on a freshly restored chassis, that is assuming this is a body off restoration. If its just a repaint, then mask the best you can and don't worry about it.- Top
