That Styrofoam-appearing strip wasn't on the car originally. All of the coupes (#003, #004, and #005) had pop-riveted on aluminum flanges about 1" wide added on the rear wheel openings to satisfy an F.I.A. tire coverage requirement at 1964 Sebring.
#004 just finished its most recent restoration last year, for the 2013 Amelia Island presentation, and the Styrofoam-appearing strip was added during that restoration, reason unknown. Photos below of #003 (race #2, with flange, no foam) and #004 (race #3, with foam).

The #11 car in your pictures is a production Sting Ray.
Clues are: The lack of a fuel filler cap in the B pillar, the lack of a recessed door handle, and the lack of a rear air scoop for the brakes.
The #14 car appears to be GS #003 and that picture looks to have been taken shortly after Sebring '65, when it was white and ran as #1.

One of the Grand Sports also ran as car #11. It ran in the C Modified class and didn't compete against the Gulf Oil #11 which ran in A Production.
